As someone who previously had no experience sharpening knives, I know how intimidating it can be to find someone you trust to sharpen your knives and do it well. I also know that it can be difficult to find people who can educate you on the sharpening process and give you advice on the knives you use and care for.

Finding somewhere to get your knives sharpened and finding knives that work for you is nerve wracking, especially if you don't know anything about them. I want to be someone you can trust to sharpen your knives and also be there to educate and advise you on what the sharpening process is like and which knives work best for you.

Even the cheapest of knives can achieve excellent performance with correct care and sharpening.

Expensive knives don't always mean better knives.

My sharpening journey

My sharpening journey began when I received a set of 30 year old Wüsthof knives. Unhappy with their condition, I took to sharpening them and eventually restored them to better than new. Sharpening then became a passion of mine and I began to sharpen anything I could get my hands on. I began by learning proper technique before moving on to learning different styles of knife sharpening. While I originally started with smaller whetstones, I now use professional sharpening equipment that enables me to sharpen more precisely and to tailor my sharpening to the knife I am working on.

How I sharpen

The first step would be to discuss what knives you want to have sharpened. During this process, I get to learn about the way you use your knives, as well as what you would like them to be able to do. Using this information, I will tailor the sharpening process to the way the knife is used.

The next step is to look at your knives and determine how I will sharpen each one and how much I will charge.

I would then take your knives and sharpen them and return them to you as scheduled. Expedited services may be possible.

When I return them to you, you'll have a chance to test then knives to ensure they are to your liking. If you'd like additional adjustments, we can discuss them at this time.

With proper use and care, your knives will remain in excellent condition until you are ready to have them sharpened again

Why sharpen your knives?

Sharp knives allow you to achieve results with less effort and greater precision.

They enable you to cut things quickly and easily.

A sharp knife also allows the blade to cut into things without the risk of the knife slipping and possibly injuring you.

How often do knives need to be sharpened?

How often a knife needs to be sharpened depends on what you use it for. A kitchen knife that you use for cutting vegetables will probably dull faster than a knife you use for cutting cardboard.

Additionally, how frequently the knife is used plays a big role in how often it needs to be sharpened. A chef's knife that you use every day will need to be sharpened sooner than a knife you only use occasionally.

What do different styles of sharpening do?

Different styles of sharpening allow the knife to perform at its best for the tasks it is used for. A knife that you use for mincing garlic benefits from a finer and more delicate edge. Whereas a knife you use to cut larger objects like squash or carrots benefits from a stronger edge.

How to care for your knives once they've been sharpened.

Properly caring for your knives will allow them to cut better for longer.

It is good practice to wash or at least wipe down a knife after you are done using it so that the residue doesn't cause damage to the blade. You also want to avoid dishwashing the knives as the high temperature and positioning mean that the metal and handle wear faster, as well as causing the edge to dull.
